There’s nothing quite like complimentary breakfast bubbly to shift you into holiday mode. And so each morning at The Colonial, one of four dining outlets within the hotel and by far the most fanciful, I help myself to sparkling wine, leg ham straight from the bone, cheese, pastries and a la carte eggs.
By night, the restaurant transforms into an elegant fine-diner serving classical French cuisine, including foie gras roulade and wagyu fillet and accompanied by what I’m told is the most extensive wine menu in Vietnam. It’s an ambient affair, with 70-something, in-house jazz singer Ben on the piano.
The Colonial is the fine-dining restaurant and, from 7am to 4pm, the club lounge for selected suite and villa guests. Serving classical French cuisine in the evenings accompanied by music on the grand piano, it has a list of remarkably fine wines. Nice Touch: The afternoon tea is as pretty as a picture with salmon and cucumber finger sandwiches, scones with jam and cream, macaroons, mini lemon meringue pies and chocolate muffins on a tiered plate.
